Bringing the taste of the Canton of Aargau to the skies

As part of the SWISS Taste of Switzerland program, SWISS First, Business and Premium Economy guests on long-haul flights from Zurich and Geneva are currently being offered culinary menu creations by Michelin-starred chef Manuel Steigmeier from Canton Aargau.

Manuel Steigmeier became the tenant and head chef of the FAHR restaurant in Sulz in the canton of Aargau at the age of 22. Seven years of dedication have earned him and his team prestigious awards, including a Michelin star and 17 Gault Millau points. From September to November 2024, the renowned chef will now be presenting his creations and philosophy in selected travel classes on SWISS long-haul flights from Switzerland.

As a starter, SWISS First guests can look forward to char tartare with dill mayonnaise and a cucumber and yogurt mousse. For the main course, Manuel Steigmeier prepares braised veal cheeks accompanied by mascarpone polenta. Alternatively, guests can choose the roasted cod with chimichurri, served with creamy fregola sarda. The course is finished off with a classic chocolate financier.

Guests in SWISS Business can start their meal with Manuel Steigmeier's marinated salmon trout. For the main course, guests can choose between Beef Stroganov, accompanied by spaetzli, beet and sour cream, or a sautéed pikeperch served with a pretzel dumpling and broccolini. The menu is rounded off with a chestnut cake prepared with vanilla whipped cream and a mandarin-calamansi gel.

The three-course menu in SWISS Premium Economy is also inspired by the canton of Aargau. Among other things, guests can enjoy Habsburg Ritterkäse and Aarenberger as well as a traditional carrot cake with crème diplomate for dessert.
